Cool Edit Pro and SoundForge are very good ones.

Cool Edit Pro is more for editing an existing song, it's not great for creation/mixing.

SoundForge, on the other hand, is great for mixing tracks and assembling songs.

Midi files are incredible. They allow you to take a song and map the vocals and other instruments to any sound you want, you can turn a hip-hop song into a piano and string instrument piece, or turn classical into some funky bass song.....do whatever you want, the possibilities are endless.

They just sound like crap to someone who has no clue what they are......
